Asian Cedar Plank Salmon

Ingredients

2 Untreated Cedar Planks

4 (8oz) Salmon Fillets

1/4 Cup Pineapple Juice

1/3 Cup Soy Sauce

2 Tbsp White Vinegar

2 Tbsp Fresh Lemon Juice

1 Tbsp Olive Oil

3/4 Cup Honey

1/4 Cup Packed Brown Sugar

1/2 Tsp each: Paprika, Cayenne Pepper

1 Tsp Black Pepper

1 Tsp Garlic Powder

Instructions:

1. Soak planks in warm water 1 - 2 hours. In a medium saucepan simmer pineapple juice, soy sauce, vinegar, lemon juice, olive oil, and honey over med-high heat.

2. Reduce heat to med-low, stir in sugar. Add black pepper, cayenne pepper, paprika, and garlic powder. Simmer stirring occasionaly until syrupy, about 15 min.

3. Set aisde sauce, preheat outdoor grill to medium heat. Place planks on the grate - theyare ready when just starting to smoke and crackle.

4. Salt and pepper salmon nad place on planks. Cook covered for 10 minutes then uncover and glaze with sauce. Cook an additional 5 minutes. Serve with remaining sauce.
