1 pkg Prepared Dough, thawed
1 Onion, sliced thin
1 Handful Arugala (scant cup)
5 Fresh Figs, Sliced in half
4-6 Slices Proscuitto or cooked bacon, torn or crumbled
5 oz Goat cheese
Balsamic Vinegar to drizzle at end
1. Pre heat grill to HOT, at least 550F. Roll out dough to about a 9-10 inch circle or 12x6 inch rectangle brushing one side with olive oil. Caramelize your onions and allow to cool slightly while waiting for grill to heat.
2. Place oiled dough side down on hot grill, cook with lid on for 1-2 min with lid on or 3-4 minutes with lid off. Flip dough and get ready to work quickly!
3. Arrange figs (cut side up), prosciutto, onions and goat cheese, top with arugala and close lid to cook the pizza for a few more minutes about 4-5 checking often until cheese has melted.
4. Remove from grill allow to cool slightly before serving and drizzle with a high quality balsamic vinegar to finish.
The dough will release from the grill with little effort when it is ready to be flipped, don’t rush it or you’ll have a mess.
If you’re not a fan of goat cheese substitute fresh mozzarella cheese.
