Salmon with Blueberry Salmon

Ingredients

4 Salmon Fillets (6 oz)
1/2 Lg Pink Grapefruit, peeled & diced
2 Tbsp Red Onion, finely diced
1 Jalapeno, seeded & diced
1/2 Tsp Cumin
1 Tsp Honey
1 Tbsp Fresh Lime Juice
1/2 cup frozen blueberries, thawed
1 Cup Fresh Blueberries
1/2 Bunch Cilantro, chopped
Salt and Pepper to taste
1/2 Tsp Garlic Powder

Instructions

1. Prepare grill and oil the grate, or preheat broiler. Salt and pepper salmon to taste and sprinkle with garlic powder.

2. Grill or broil salmon for 6 to 8 minutes or until cooked through.

3. While salmon is cooking mix together all remaining ingredients for the salsa. Serve on top of fish or on the side. Serves 4

Cook’s Notes:

Thoroughly peel and remove all membrane from the citrus fruit, if not done the salsa will have a bitter undertone. No time for that? Cheat and get the stuff from the produce department that is done for you.
