1 -2 lbs Lamb cut to bite-sized pieces
1/2 Cup Extra Virgin Olive Oil
2 Tbsp Garlic, crushed
1 Tbsp Dried Oregano
1 Tsp Dried Rosemary
1 Medium Sized Cucumber, chopped
1 Large Tomato, chopped
1 Red Onion, thinly sliced
Greek Tzatziki Sauce
1 Pkg Greek Pita, warmed in oven
Feta cheese or romano crumbled
Pitted Kalamata Olives
Lemon Wedges, for garnish
Place cut lamb in a glass dish with olive oil, oregano, rosemary, garlic, salt and pepper and let marinate for at least 1 hour to overnight.
Broil Lamb on a sheet pan about 6-7 minutes each side - do not overcook, set aside tented with foil. You can also grill on skewers for about 4-5 minutes each side. Remember to SOAK skewers before grilling.
Assemble sandwiches. Place lamb onto pita topped with veggies and tzatziki sauce. Garnish with feta and kalamata olives if desired if desired.
