Lamb Souvlaki

Ingredients:

  • 1 -2 lbs Lamb cut to bite-sized pieces

  • 1/2 Cup Extra Virgin Olive Oil

  • 2 Tbsp Garlic, crushed

  • 1 Tbsp Dried Oregano

  • 1 Tsp Dried Rosemary

  • 1 Medium Sized Cucumber, chopped

  • 1 Large Tomato, chopped

  • 1 Red Onion, thinly sliced

  • Greek Tzatziki Sauce

  • 1 Pkg Greek Pita, warmed in oven

  • Feta cheese or romano crumbled

  • Pitted Kalamata Olives

  • Lemon Wedges, for garnish

Instructions:

  • Place cut lamb in a glass dish with olive oil, oregano, rosemary, garlic, salt and pepper and let marinate for at least 1 hour to overnight.

  • Broil Lamb on a sheet pan about 6-7 minutes each side - do not overcook, set aside tented with foil. You can also grill on skewers for about 4-5 minutes each side. Remember to SOAK skewers before grilling.

  • Assemble sandwiches. Place lamb onto pita topped with veggies and tzatziki sauce. Garnish with feta and kalamata olives if desired if desired.
