Spicy Sausage Chili

Serves 6-8

1 Tb. olive oil

1 lb. spicy ground sausage

2 lb. Andouille sausage, cut into chunks

1 large garlic clove, minced

1 green pepper, diced

2 onions, diced

2 – 3 Tb. chili powder

1 Tb. ground cumin

1 bottle dark beer

1 28 oz. can diced tomatoes

2 Tb. tomato paste

2 cans (15 oz.) kidney beans, rinsed and drained

Salt and pepper to taste

Grated cheddar, chopped green onions, chopped cilantro for garnish

Instructions

1. In a big ol’ pot, heat the oil over medium heat then add the ground sausage and brown it about 5 minutes.

2. Then add the Andouille sausage and let that brown for another 5 minutes. Drain off any extra fat and add the garlic, green pepper, onions, chili powder and cumin and sauté till the onions get soft, about 5 more minutes.

3.Pour in the beer to deglaze the pan and when the foam subsides add the tomatoes, tomato paste, and beans. Cook, stirring often so it doesn’t stick, adjust the seasonings, top with goodies, and you’re in tailgate heaven!
