Yams with Carmelized Onions
2 lbs. yams
4 tablespoons butter
½ cup maple syrup
salt & pepper to taste
1 large onion, sliced vertically
2 tablespoons butter
Place yams on baking sheet at 400 degrees & bake until tender (about 45 minutes - 1 hour). Let cool enough to handle. Slip off skins.
While Yams are baking make carmelized onions. Melt butter in a medium saute pan over medium high heat. Add onions, stirring occasionally until golden. Set aside.
Place yams in a bowl and mash. Melt butter and pour over yams. Add maple syrup, salt and pepper, mix. Pour into serving bowl and top with caramelized onions.
