Warm Plum Salad with Prosciutto

Ingredients:

1 lb plums, pitted and quartered

salt and pepper to taste

1 teaspoon fresh thyme leaves

2 teaspoons olive oil

½ cup dry white wine vinegar

1 bunch or bag spinach, washed

½ lb proscuitto


Instructions:

1. Toss plums with salt, pepper and thyme.

2. Saute in olive oil until juicy but still hold their shape.

3. Add wine and vinegar and cook until slightly thickened.

4. Place spinach on platter and arrange proscuitto over the top. Spoon plums and sauce over the top of the spinach.
