Oven Fried Chicken
1/2 Cup Lowfat Buttermilk
1 Tbsp Cajun Seasoning of choice
1 Cup Panko Breadcrumbs
2 Chicken Breast halves, skinned
2 Chicken Drumsticks, skinned
2 Chicken Thighs, skinned
1. Preheat oven to 400 degrees F.
2. Combine buttermilk and cajun seasoning in a shallow pan or dish. Place Panko in another shallow dish or pan. Dip chicken pieces into buttermilk mixture allowing excess to drip off then dredge in panko and set aside on a plate or wire rack.
3. Place chicken on a baking sheet lined with parchment paper. Lightly coat chicken with cooking spray and bake at 400 degrees for 40 minutes or until cooked through, turning over after 20 minutes.
