Mediterranean Chicken Salad

Ingredients:

3 pounds chicken breast, cooked

¾ cup kalamata or nicoise olives, pitted

3 tablespoons capers, drained

2 medium tomatoes, wedged

½ pound green beans, cooked

1 can artichoke hearts, quartered

1 cup roasted red peppers, chopped

½ cup crumbled feta cheese

vinaigrette of your choice


Instructions:

1. Break chicken into bite-sized pieces.

2. Combine ingredients and toss with vinaigrette.

3. This salad can be made in advance, add the green beans and feta right before serving.
