Herb and Wine Sauce

Ingredients:

½ cup dry white wine

1 cup flat-leaf parsley, chopped

2 scallions, thinly sliced

salt and pepper to taste

2 tablespoons unsalted butter, chilled


Instructions:

1. Bring wine to boil in large skillet or sauce pan over medium-high heat.

2. Add parsley, scallions, salt and pepper.

3. Remove from heat.

4. Add butter and swirl skillet until melted.

5. Serve over chicken or fish or on the side.
