Baked Blueberry French Toast
Ingredients:
8 slices brioche or french bread
1 cup fresh blueberries
8 oz cream cheese, cubed
12 large eggs
2 cups milk
½ teaspoon salt
¼ cup maple syrup
Instructions:
1. Arrange french bread, or brioche in an oiled 9x13 inch baking dish. Sprinkle with blueberries and cream cheese.
2. Whisk together eggs, milk, salt and syrup. Pour over bread. Cover and refrigerate several hours or overnight. Bring to room temperature before baking.
3. Preheat oven to 350 degrees. Bake covered for 30 minutes. Uncover and bake until lightly browned, another 30 minutes.
4. Serve with blueberry syrup.
