Dubliner Lyonnaise Potatoes
Ingredients:
1 large onion, finely sliced
4 large potatoes, sliced into thick rounds
¾ cup chicken stock
½ cup Dubliner cheese, grated
½ cup Kerrygold butter, cut in small pieces
Instructions:
1. Preheat oven to 400 degrees.
2. Layer the potatoes and onions in an ovenproof dish. Season with salt and pepper, cover with chicken stock and dot with butter.
3. Bake for 45 minutes.
4. Remove from oven, top with Dubliner cheese and return to oven for 30 minutes. Allow to rest 10 minutes before cutting.
