Cashel Blue

When Louis and Jane Grubb set out to make Cashel Blue® in the early 1980’s, their ambition was to create a farmhouse cheese that “truly represents the outstanding quality of Tipperary grass-fed milk.” Today, more than 30 years later and in the hands of the 2nd generation, Cashel Blue is still made by hand on the same 200 acre farm; Beechmount, in Co. Tipperary, Ireland. We also make Crozier Blue, Ireland’s only sheeps’ milk blue.

Pairing and Accompaniments

Cashel Blue shines on a cheese tray and sings when paired with sweet items such as spiced nuts, honey or preserves like Divina Sour Cherry Spread. Choose light flavored crackers and serve with your favorite craft beer, wine or whiskey.

Kerrygold Blarney Stone

Blarney Castle was built to protect one of the richest cow herds and most prosperous pastures of the time. Now almost 600 years later, our Blarney Castle Cheese is produced using the same verdant green rolling hills and sparkling pure streams that meander through these once fiercely protected lands. And of course, it’s made from the milk of grass-fed cows who graze there. It would be hypocritical of us to produce a gourmet Irish cheese called Blarney Castle without living up to its heritage. So automatically it has to be a 100% natural grass-fed cheese without a speck of artificial flavors or additives.

Pairings and Accompaniments

Blarney Castle is a mild and creamy cow’s milk cheese with rich and velvety undertones. It both feels and tastes similar to a young Dutch Gouda cheese and makes a perfect complement to fresh fruit and a glass of crisp wine, like Sauvignon Blanc.

Oscar Wilde English Cheddar

Oscar Wilde Cheddar is aged for 2 years in Ireland’s dairy heartland, County Cork. With a distinct creamy flavor, this cheese is made from farm-fresh cow’s milk from multi-generation family farms.

Pairings and Accompaniments

This natural white cheddar has a semi-firm texture and pairs well with eggs, fresh fruit, Dalmatia fig spread, and toasted Marcona almonds. Excellent with Cabernets and Irish stouts.
