il Cacino Rosso
il Cacino Rosso is an aged Pecorino Romano (sheep’s milk) cheese from Italy. A small size pecorino , it differs from the “Cacino” because of the rind treatment with tomato paste and extra virgin olive oil that gives the product its typical red color .
Grates well over pasta and is good in salads or mashed potatoes. A nice and unique addition to a cheese platter. Pair with accompaniments such as cured meats like ham, prosciutto or salami. Nicely met with olives and pickled vegetables or with tapenades. Excellent paired with quince paste, young red wines or chianti.
