This month our deli has brought in some fabulous new cheeses, and for those who may dabble strictly with cow cheese, we have dedicated this month to give you an introduction into the fabulous world of goat’s milk!

Goat cheese is available in many varieties and has a pleasant taste ranging from ultra sharp to sweet and tangy. The distinct taste of goat cheese is a nice change to milder cow cheeses and can literally be used every way cow cheese can.

Goat cheeses, due to the naturally occurring lower fat content, lower lactose levels and differing protein structure from cows milk is more easily digested making it excellent for infant diets, ill people, convalescents and gentler to those that are lactose intolerant. For the large population who has milk allergies, goat’s milk is an acceptable replacement for cow’s milk. Goat’s milk contains only trace amounts of an allergenic casein protein, alpha-S1, found in cow's milk, in fact, goat's milk casein is more similar to human milk.
